Khandvi is a popular Gujarati snack made from gram flour (besan) and yogurt. It is a savory dish that is often served as an appetizer or a tea-time snack. Here are the steps to make khandvi:
Ingredients
1 cup gram flour (besan)
1 cup yogurt2 cups water
1/2 teaspoon turmeric powder
1 teaspoon ginger paste
1 teaspoon green chili paste
1 teaspoon salt
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
A pinch of asafoetida
1/4 cup grated coconut
2 tablespoons chopped coriander leaves
Instructions:
*In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, ginger paste, green chili paste, and salt. Whisk the mixture well to make a smooth batter.
* Heat a non-stick pan over medium heat and add the batter to it. Stir continuously for 7-8 minutes or until the batter thickens and starts leaving the sides of the pan.
*Once the batter thickens, immediately pour the batter onto the back of a greased plate or a smooth surface.
*Spread the batter evenly using a spatula to make a thin layer of the batter. Let it cool for a few minutes. Once the batter has cooled down, cut the khandvi into strips using a sharp knife.
*Roll up each strip tightly and place it on a serving plate. For tempering, heat oil in a small pan and add mustard seeds. When the mustard seeds start to crackle, add cumin seeds and asafoetida.
*Pour this tempering over the khandvi rolls.
*Sprinkle grated coconut and chopped coriander leaves on top.
Serve the khandvi rolls immediately and enjoy!
