Ingredients:
4 medium-sized potatoes, peeled and chopped into bite-sized cubes
1 onion, chopped
1 red or green bell pepper, chopped
2-3 green chilies, chopped
2 tbsp vegetable oil
1 tsp cumin seeds
1 tsp ginger paste
1 tsp garlic paste
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
Salt, to taste
Fresh coriander leaves, chopped for garnish

- Add ginger and garlic paste and sauté for another minute.
- Add the chopped potatoes and mix well.
- Add red chili powder, coriander powder, cumin powder, and salt to taste. Mix everything together.
- Cover the pan and cook for 15-20 minutes until the potatoes are cooked through, stirring occasionally.
- Once the potatoes are cooked, remove the cover and cook for a few more minutes until the potatoes are slightly crispy.
- Garnish with fresh coriander leaves and serve hot as a snack or a side dish.
