Indulge in the Creamy Goodness of Dahi Bhalle: A Step-by-Step Recipe

Dahi Bhalle, also known as Dahi Vada, is a popular Indian snack that is made with lentil dumplings that are soaked in spiced yogurt and served with a tangy tamarind chutney. Here's how to make Dahi Bhalle:

                                                   


Ingredients:


For the Vadas:
1 cup urad dal (white lentils)
Salt, to taste
1 teaspoon ginger paste
Oil, for frying
For the Yogurt:
2 cups plain yogurt
1/2 teaspoon roasted cumin powder
1/2 teaspoon red chili powder
Salt, to taste
For the Tamarind Chutney:
1/2 cup tamarind pulp
1/2 cup jaggery (or brown sugar)
1/2 teaspoon roasted cumin powder
1/2 teaspoon red chili powder
Salt, to taste
For Garnish:
Roasted cumin powder
Red chili powder
Chopped coriander leaves


Instructions:

*Soak the urad dal in water for 4-5 hours.
*Drain the water and grind the lentils to a smooth paste in a food processor or blender. Add a little water if needed.
*Add salt and ginger paste to the lentil batter and mix well.
*Heat the oil in a deep frying pan over medium heat.
*Wet your hands and take a small amount of the lentil batter. Flatten it slightly and make a small hole in the center.
*Gently slide the vada into the hot oil and fry until golden brown. Remove with a slotted spoon and drain on a paper towel.
*Soak the fried vadas in water for 10-15 minutes, or until they become soft.
*Squeeze out the excess water from the vadas and set aside.
*In a mixing bowl, whisk the yogurt until smooth. Add roasted cumin powder, red chili powder, and salt, and mix well.
*Dip the vadas in the yogurt mixture, making sure they are fully coated.
*To make the tamarind chutney, mix the tamarind pulp, jaggery, roasted cumin powder, red chili powder, and salt in a small saucepan. Cook over low heat until the mixture thickens.
*To serve, place the vadas in a serving dish and pour the tamarind chutney over them. Sprinkle roasted cumin powder, red chili powder, and chopped coriander leaves on top.
