Pav Bhaji is a popular street food dish in India, particularly in the state of Maharashtra. It consists of a spicy vegetable curry (bhaji) that is served with a soft bread roll (pav). Here's the recipe for Pav Bhaji:
Ingredients:
4 large potatoes, boiled and mashed1 cup of peas
1 large onion, finely chopped
3 large tomatoes, finely chopped
2 green bell peppers, finely chopped
1 tablespoon ginger paste
1 tablespoon garlic paste
2 tablespoons Pav Bhaji Masala
1 teaspoon cumin seeds
1 teaspoon red chili powder
Salt, to taste
4 tablespoons of butter
8 Pav (bread rolls)
Coriander leaves, finely chopped
Lemon wedges
Instructions:
*Heat the butter in a large pan or wok over medium heat.*Add cumin seeds and let them splutter for a few seconds.
*Add the onions, ginger paste, and garlic paste, and sauté until the onions turn translucent.
*Add the green bell peppers and sauté until they are soft.
*Add the tomatoes, salt, and red chili powder, and cook until the tomatoes are soft and the oil separates from the mixture.
*Add the Pav Bhaji Masala and stir well.
*Add the peas and mashed potatoes, and stir until everything is well combined.
*Cook for 10-15 minutes, stirring occasionally and adding a little water as necessary to keep the mixture from sticking to the pan.
*Use a potato masher or an immersion blender to mash the vegetables until you get a smooth consistency.
*To prepare the Pav, heat a little butter in a pan and lightly toast the Pav on both sides.
*Serve the Pav Bhaji hot, topped with a dollop of butter, chopped coriander leaves, and a squeeze of lemon juice.
