Here's a recipe for delicious appe (also known as paniyaram) made in an appe maker:
Ingredients:
1 cup semolina (rava/sooji)
1/2 cup curd (yogurt)
1/2 cup water
1/4 cup grated carrot
1/4 cup chopped onion
1 green chili, finely chopped
1/2 tsp ginger paste
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds (rai)
1/2 tsp urad dal
1/2 tsp chana dal
A pinch of asafoetida (hing)
Salt, to taste
1 tbsp oil

1/2 cup water
1/4 cup grated carrot
1/4 cup chopped onion

1/2 tsp urad dal
1/2 tsp chana dal

1 tbsp oil
Instructions:
- In a mixing bowl, combine semolina, curd and water. Mix well to form a smooth batter. Cover the bowl and let it rest for 15-20 minutes.
- Heat oil in a small pan. Add cumin seeds, mustard seeds, urad dal and chana dal. Once the mustard seeds start spluttering and the dal turns golden brown, add asafoetida and chopped onion. Fry till the onion turns translucent.
- Add grated carrot, green chili and ginger paste to the pan. Cook for 1-2 minutes, until the carrot softens a bit.
- Add the onion-carrot mixture to the semolina batter. Mix well. Add salt as per taste.
- Preheat the appe maker. Grease the appe moulds with a few drops of oil.
- Pour a spoonful of the batter into each mould. Cover and cook on medium heat for 2-3 minutes.
- Once the bottom of the appe turns golden brown, flip them over using a spoon or skewer. Cook the other side for another 1-2 minutes.
- Remove the appe from the maker and serve hot with chutney or sauce of your choice.
