Chole Bhature is a popular North Indian dish that consists of spicy chickpea curry served with deep-fried bread made of wheat flour. Here is the recipe to make Chole Bhature:
2 tablespoons vegetable oil
1 large onion, finely chopped
2 teaspoons ginger paste
2 teaspoons garlic paste
2 tomatoes, finely chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt, to taste
2-3 cups water
2 tablespoons fresh coriander leaves, chopped
1/4 cup semolina (suji)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup yogurt
1 tablespoon vegetable oil
Salt, to taste
1/2 cup warm water
Vegetable oil, for deep frying

For Chole:
2 cups dried chickpeas2 tablespoons vegetable oil
1 large onion, finely chopped

2 tablespoons fresh coriander leaves, chopped
For Bhature:
2 cups all-purpose flour (maida)1/4 cup semolina (suji)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup yogurt
1 tablespoon vegetable oil
Salt, to taste
1/2 cup warm water
Vegetable oil, for deep frying
Instructions:
*In a pressure cooker, heat oil and add cumin seeds. Once they start to crackle, add chopped onions and sauté until they turn translucent.
*Add ginger and garlic paste and sauté for a few seconds.
*Add the chopped tomatoes and cook until they become soft and mushy.
*Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and sauté for a minute.
*Add the soaked chickpeas and water, and mix well.
*Close the pressure cooker and cook the chickpeas for 5-6 whistles or until they become soft.
*Once the pressure is released, open the pressure cooker and cook the chole on low heat for 10-15 minutes, or until the gravy thickens.
*Garnish with fresh coriander leaves and keep aside.
*To make bhature, in a mixing bowl, combine all-purpose flour, semolina, baking powder, baking soda, yogurt, oil, salt, and warm water.
*Knead the dough well until it becomes smooth and pliable. Cover and let it rest for 2-3 hours.
*After 2-3 hours, divide the dough into equal portions and roll them into balls.
*Flatten each ball using a rolling pin and shape it into a circle or oval shape.
*Heat oil in a deep frying pan over medium-high heat.
*Once the oil is hot, carefully place the bhature in the oil and fry until they puff up and turn golden brown.
*Remove the bhature from the oil and place them on a paper towel to remove excess oil.
Serve hot with the prepared chole and enjoy!
